Extending solid Cat5e cable?

I've got a bit of a problem - my loft conversion starts in the next
few weeks but before that, I've got to move around 80-90 Cat5e solid core
cables. They route through the existing loft and across a number of joists
at various angles. They'll have to be re-routed before work starts as they
will most certainly get damaged otherwise and they're also in the way.
Unfortunately there's not enough slack to move them that way.

The Cat5e is used for a mixture of Gigabit Ethernet, video, whole house
audio keypads, serial etc etc. Are there any acceptable ways to lengthen a
cable and then permanently enclose it in the fabric of a building i.e.
would never be able to get at the join again?
